This mesclun is primarily intended for harvestingyoung prickly leavesEnjoy them in mixed salads, on toast, or as a flavorful garnish for everyday dishes. The leaves, which vary in intensity depending on their maturity and the specific variety, have a mustard-like flavor, ranging from mildly peppery to more pronouncedly spicy.
They can be used:
- raw, mixed with other milder greens to balance the aromatic intensity;
- lightly sautéed or added at the end of cooking to vegetable, rice or noodle dishes for a spicy note;
- finely chopped as a finishing touch to soups or broths.
Surpluses can be kept for a few days in a cool place, well drained, or can be transformed into a mixture of greens to cook and freeze, as needed.
