Calendula flowers are traditionally used in herbal medicine and cooking. The ray florets (petals) can be eaten raw or cooked, added to salads, compound butters, soups, or grain dishes to provide a touch of color. Dried, they were long used as a "poor man's saffron" to color broths and rice. In traditional medicinal use, the flower heads are used in infusions, in oil macerations, or in ointments for their skin-softening properties, in homemade preparations.
