Italian parsley is a staple of Mediterranean and European cuisines. Its flat, aromatic leaves are finely chopped to enhance salads, soups, sauces, vegetable dishes, fish, and meat. It's an ingredient in many herb blends, such as some versions of bouquet garni and tabbouleh. It's best added at the end of cooking or just before serving to preserve its aroma and color. The leaves can be preserved by gently drying or, to retain maximum flavor, finely chopped and frozen (for example, in small cubes in water or oil). Parsley is also one of the herbs traditionally grown near the home, always on hand for meals.
