Clemson Spineless okra pods are traditionally eaten young, cooked whole or sliced. They are widely used in the cuisines of West Africa, India, the Middle East, and the southern United States, particularly in stews and the popular gumbo dish. Their slightly mucilaginous texture makes them a natural thickening agent for soups and sauces.
They can be sautéed over high heat, simmered with tomatoes, onions, and spices, or even breaded and fried. The harvest freezes easily after a light blanching, allowing you to enjoy them out of season. In some traditions, the dried pods and seeds are also used in stews or roasted.
