The Choricero pepper is best known for its traditional use in Spanish cuisine. Harvested red and then dried, it develops a sweet, deep aroma with little to no heat. It is typically used by rehydrating it in warm water, then scraping out the flesh and adding it to sauces, stews, and casseroles.
It is a classic ingredient in many regional dishes, where it contributes red color, fruity aromas, and a subtle smoky note when properly dried. The berries can also be ground into a powder after complete drying and used as a seasoning. Fresh, while still red, they are suitable for baking, frying, or grilling, and can complement vegetable, grain, or legume dishes.
Dried chilies can be stored for several months in a dry, dark place. They can be hung in garlands in the kitchen, combining storage and a decorative element.
