The Oregon Sugar Pod pea is a snap pea: the entire pod, still flat, is eaten, with the very young peas inside. The pods can be enjoyed raw as a snack or in salads, or lightly sautéed in a pan or wok to preserve their crispness and sweetness. They pair well with seasonal vegetable dishes, Asian-inspired stir-fries, and spring stir-fries with radishes, baby carrots, or green onions. The pods can also be briefly blanched and then cooled to be added to mixed salads. For short-term storage, they can be kept for a few days in the refrigerator in a bag or perforated container after harvesting. As with other peas, it is also possible to let some pods fully mature to eat the dried peas, although this variety is primarily valued for its fresh pods.
