Shunkyo radish is eaten fresh, like other garden radishes. Its long, crunchy root is perfect for eating raw, sliced into rounds or sticks, in salads or as a crunchy garnish. The young leaves can also be used in small quantities in mixed greens, according to individual culinary preferences.
As with other radishes, the roots can be incorporated into pickled preparations or kept in the refrigerator for a few days after harvesting, ideally with a little moisture to keep them fresh.
