Note: Tolerates cool spring and autumn temperatures well, but tends to bolt quickly in heat or drought.
Garden rocket is especially appreciated as a raw leafy vegetable: it perfumes mixed salads, mixed baby greens (mesclun) and sandwiches with its characteristic peppery flavor.
It is also used finely chopped as a finishing touch on pizzas, pasta, or omelets, added at the end of cooking to preserve its flavor. The leaves can be made into pesto, either on their own or mixed with basil or other herbs. In Mediterranean culinary traditions, arugula often accompanies fresh cheeses, olive oil, and tomatoes.
It does not keep for long in the refrigerator; therefore, harvesting as needed is preferred over prolonged storage.
