- Growing climate: Cool to temperate climate
- Sowing difficulty level: Easy
- Care required: Occasional
Note: Prefers moist but not excessively moist soil and a sunny to partially shaded location.
Multicolored roots lend themselves to a wide variety of preparations: grated raw in salads to retain their crunch and vibrancy, roasted in the oven to bring out their natural sugars, or even puréed, in soups and pickles. Some varieties are well-suited to lacto-fermentation.
The young leaves, tender and rich in nutrients, can be sautéed, added to soups, or prepared like spinach. A staple of winter preserves, this versatile crop is firmly rooted in the culinary tradition of preserving food.
