Although Flamingo Feather is primarily an ornamental variety, celosia belongs to a family of plants, several species of which are consumed as a leafy vegetable in various parts of the world, notably in West Africa and South Asia. There, it is sometimes known as "Lagos spinach" or soko yokoto, and its young leaves are cooked by stir-frying, simmering, or adding to soups.
The Flamingo Feather variety, however, is cultivated specifically for its decorative flowers, not for food. Nevertheless, it carries the memory of a food-producing plant, and its floral elegance reminds us that gardening traditions often draw on both beauty and abundance.
