While other radishes remain close to the ground, this one grows upwards, developing a light foliage and bearing its thin, elongated pods high up, which are harvested young and still tender.

Native to Asia, the Rat Tail radish (often called stalk radish or snake radish) is one of the older varieties of radish cultivated for its long, crisp pods rather than its root. Note: Like other radishes, it appreciates cool soils and regular moisture to remain tender and limit bitterness.
The young pods of the Rat's Tail radish are eaten raw, like a small, crunchy vegetable. They can be added to salads, crudité platters, or simply eaten raw like a green bean, with a characteristic radish flavor, more or less peppery.
They can also be briefly stir-fried in a wok or pan-fried, added at the end of cooking to mixed vegetables, or even pickled in vinegar, a simple way to extend the harvest. In some Asian traditions, this type of radish with its distinctive pods is used as a crunchy condiment to accompany rice or noodle dishes.
