Note: Late summer sowing for autumn and early winter harvests; tolerates cold well but dislikes heat which causes it to bolt.
Black winter radish is mostly eaten raw or grated, often thinly sliced or julienned, alone or mixed with other root vegetables. Its crisp flesh and pronounced flavor, typical of winter radishes, make it a popular ingredient in salads, remoulades, and certain traditional dishes.
It can also be sliced and lightly salted to soften the taste before serving. In many European cuisines, it is used as a side vegetable or condiment.
The roots keep well in a cool place, making them a good storage vegetable for the cold season.
