Note: Heat-demanding plant; production is best in a warm location sheltered from the wind.
The Early Jalapeño variety is used like other jalapeños:
- In fresh cuisine: sliced or chopped in salsas, taco fillings, chilis, spicy salads or on pizzas.
- Stuffed and cooked: stuffed jalapeños (cheese, mixture of grains or vegetables), grilled or baked.
- Preservation methods: as slices marinated in vinegar, through lacto-fermentation, or frozen after being cut or whole.
- When fully ripe and red, the fruits are more aromatic and can be dried or smoked to obtain a more complex condiment.
The spiciness remains moderate to medium (typical of jalapeños), making it an accessible chili pepper for many family preparations, while bringing warmth and aroma.
