Lemon cucumber is best enjoyed fresh, in salads or raw vegetables, where its crisp flesh and mild flavor add a unique touch. It is also delicious pickled or marinated, where it retains its firm texture and bright color.
Lemon cucumbers harvested at the ideal stage (light yellow) for a crisp texture and no bitterness. It is recommended to pick them relatively young, when the skin is just beginning to yellow (a pale yellow hue tending towards green) rather than waiting until they are completely yellow.
At this early stage, the fruit has a thin skin, firm and juicy flesh, and offers maximum crispness and sweetness. However, if it is allowed to ripen to a bright yellow and then turn orange, its flavor and texture deteriorate significantly: the flesh becomes less crisp, the seeds harden, and the taste may become bland or develop a hint of bitterness.
