Widely used in summer cooking, yellow zucchini lends itself to many preparations: sautéed, grilled, stuffed, in ratatouille, or in soup. Its tender, sweet flesh pairs well with aromatic herbs. It can be kept fresh for a few days in the refrigerator or cooked soon after harvesting to preserve its freshness.
