Note: This variety requires a lot of heat and water, so only plant it when the soil is well warmed up and water it regularly during dry periods.
The round zucchini of Nice is particularly prized for stuffing: its round shape makes it easy to hollow out and fill with grains, vegetables, herbs, or legume-based preparations. Harvested young, its tender flesh lends itself well to quick cooking: sautéed, grilled, roasted, or added to ratatouilles and summer stir-fries. It can also be grated for vegetable fritters or incorporated into zucchini bread and cake recipes. Like other zucchini, it keeps for a few days in the refrigerator after harvesting, but is best eaten soon after harvesting to fully appreciate its delicate flavor. Larger fruits can be used in soups and purées or made into preserves or chutneys, according to local culinary traditions.
