Note: Tolerates heat and dry periods well once established; growth is significantly better in full sun.
The tender leaves and stems of Golden Purslane can be eaten raw or cooked. Raw, its crisp, golden leaves add a juicy texture and a touch of acidity to mixed salads and baby greens. It pairs well with summer vegetables (tomatoes, cucumbers, spring onions) and aromatic herbs.
Cooked, it can be used as a leafy green, simply sautéed or incorporated into soups and stews, where its slightly mucilaginous texture contributes to the creaminess. In several culinary traditions, purslane is added to dishes made with vegetables, grains, or legumes.
It can also be kept for a few days in a cool place, well wrapped, after harvesting. The more tender stems are best for raw use, while the slightly firmer parts are better suited for cooking.
