Native to East Asia, soybeans ( Glycine max ) have long been used in traditional farming and cooking methods. The Agate variety, selected for edamame production, adapts well to shorter growing seasons and thrives in a productive garden in a cool climate.

Its bushy plants bear fleshy pods filled with green beans to be harvested at the milky stage. In welcoming, well-drained soil, the Agate edamame soybean offers a discreet yet effective presence: it fixes nitrogen, nourishes the soil, and contributes to a harmonious garden, while providing a generous harvest of tender shelling beans.

Note: This legume likes heat and well-warmed soil; it does not tolerate cold and waterlogged soils well.

Agate edamame soybeans are harvested at the "edamame" stage, that is, when the grains are still green, tender and full of flavor.

The grains are then boiled for a few minutes in salted water, drained, and often served as a snack, starter, or side dish. The grains are removed by squeezing the pod between the fingers. They are a good addition to salads, stir-fries, bowls, and soups.

The beans can also be blanched and then frozen for later use. Traditionally, edamame are valued for their vegetable protein content and their firm yet tender texture.
