Garden marjoram is a staple in Mediterranean and European cuisines, a close relative of oregano. Its fresh or dried leaves flavor tomato sauces, pizzas, stews, roasted vegetables, marinades, stuffings, charcuterie, and flavored oils. It is often used in combination with other herbs (thyme, basil, rosemary) in blends known as "Italian herbs" or "pizza herbs."
The leafy stems are well-suited to drying: once crisp, the leaves are stripped and roughly crumbled. The leaves can also be frozen whole or chopped in a little oil. Traditional uses mention aromatic infusions to aid digestion, but these should be approached with caution and in consultation with specialized sources.
