Annotation: Climbing snap pea variety suitable for early spring sowing in well-drained soil; sensitive to excessive heat and prolonged drought like most peas.
Golden Sweet is a snap pea: its young, yellow pods are the main part of the diet, eaten before the beans have grown too large. They can be enjoyed raw, crunchy, as a snack in the garden or in colorful salads, or briefly stir-fried in a wok, pan, or steamer to preserve their texture and color. The pods can also be added to vegetable stir-fries, Asian-inspired dishes, or spring stir-fries with other new vegetables.
Young pods can be kept for a few days in the refrigerator in a slightly ventilated container. To extend the season, they can be quickly blanched and frozen. When the pods are allowed to fully mature, the dried beans can be used like dried peas in various preparations, although this variety is primarily valued as a snap pea.
Descended from an ancient lineage, this golden-yellow podded snow pea has gracefully stood the test of time. It could be one of the varieties used by Gregor Mendel in his famous, groundbreaking experiments in 19th-century genetics.
