The Chocolate pepper lends itself to many culinary uses, with a generally mild and sweet flavor that fully develops once the chocolate brown color has fully set. It can be eaten raw, sliced or diced in salads, where its dark color provides a unique contrast to other vegetables.
Cooked, it's perfect for stir-fries, ratatouille, stuffing, and roasting in the oven or on the barbecue. The fleshy fruits can be roasted and then peeled before being marinated in oil or vinegar. Like other peppers, it freezes easily after being deseeded and chopped, for later use in stews and casseroles.
