Hailstone radishes are primarily eaten raw, like other spring radishes. Their light color makes them interesting when mixed with red or bicolored radishes to create contrasting dishes. The young leaves, when tender, can be added in small quantities to soups or sautéed like a leafy green. The roots will keep for a few days in a cool place, ideally with a little humidity and separated from their leaves, which tend to wilt more quickly.
