Note: This plant is very hardy and tolerates winter cold well once established. It tends to spread where the root is not fully harvested.
Horseradish root is used as a powerful condiment: freshly grated, it enhances sauces, meats, fish, root vegetables, and certain preserves. In several Central and Eastern European traditions, it accompanies boiled meats, Easter dishes, or charcuterie, often mixed with cream, vinegar, or beetroot.
The root should be stored in a cool place, such as a cellar or refrigerator, wrapped to prevent it from drying out. It can also be used as a prepared condiment (grated and then mixed with vinegar or a creamy sauce) to extend its culinary uses.
Various traditions also attribute popular medicinal uses to it, mainly for its stimulating and warming properties, but these uses should be approached with caution.
