Traditionally associated with the simple act of sun-drying, this small Italian tomato reveals an unsuspected richness once concentrated. Its dense, not very juicy flesh and thin skin make it an essential ingredient in thick sauces, flavorful coulis, and homemade preserves in oil.
Picked at peak ripeness, it retains its shape well and develops a deep, almost candied flavor reminiscent of a Neapolitan market stall. Once dried, it becomes a culinary treasure: it can be added to a stew, rehydrated on a pizza, or simply enjoyed warmed on fresh bread with a drizzle of olive oil.
